Food insecurity on college campuses is a big deal. According to the National Center for Education Statistics (NCES) at the U.S. Department of Education, almost 24% of college students struggle with having enough to eat while they are in college. In years past, Canterbury has maintained a food pantry to help students who are struggling, but this past semester, we decided to do something different. While we are continuing to maintain our food pantry, we decided to begin offering free lunches three days a week. Not only has the turn out been great, but an unexpected and unforeseen thing has happened. Since the students see each other every day for lunch, relationships are being built, friendships are growing, and the building is buzzing with activity every single day.
